DESCRIPTION
As barbecue became just another food trend in the Big Apple, many novelty restaurants with kitschy Southern décor, martinis and multiple novelty sauces sprouted up. Brooklyn's Fette Sau was among the first in New York to give 'cue its proper due. Emphasizing their dry rub and thorough smoking practices, Fette Sau offers a fantastic variety of smoked pork and beef with some exotic cuts to boot. Bonus points for the fantastic bourbon list. 
From the restaurant's website:
"We smoke with a blend of red and white oak, maple, beech and cherry, locally sourced and obsessively supplied by The Woodman. Our barbecue is dry rubbed; no sauce is applied during the cooking. ... We exclusively use organic and or small family farmed heritage breed animals, and we cannot get endless supplies of every cut we want. This is one of the reasons our menu changes so often."

The fact that the meat selection is quirky and variable (but featuring boutique meats) only makes you want to visit more often."
