Mark's American Cuisine has long been in the upper echelon of Houston fine dining; however this epicurean mecca re-earns its praise night after night, as Chef Mark Cox pushes the envelope of contemporary cuisine for the crowds of gourmands longing to be dazzled. And dazzled they are, seated in the converted 1920s church with intimate cloisters for private parties and stunning views aplenty. Supremely romantic ambience aside,  the food is the reason to come and to linger. Don't expect speedy service, as this is the kind of special occasion in which each bite should be savored. Chef Cox constantly alters his seasonal creations to fit what is freshest at the moment, so trust the chef's choice of the evening, and be sure to ask for help with wine pairings if you long for the full sublime experience. Dishes have included grilled veal tenderloin and cider-glazed veal short ribs, and sesame-crusted ahi tuna with bamboo plum risotto.
